This tasty chicken and dumplings recipe is flavored with thyme and lemon, giving it a very soothing flavor.
Ingredients:
1. One whole chicken (about 1.5 kgs).
2. One and a quarter teaspoon of salt.
3. 24 ounces of water.
4. Nine teaspoons of Crisco shortening.
5. 256 grams of General Mills all purpose flour.
6. One onion cut into quarters.
7. Two lemon slices.
8. One teaspoon of Mccormick's ground black pepper.
9. Another 2 ounces of water seperately.
10. One teaspoon of dried thyme.
11. A bay leaf.
Preparation:
1. Take a stock pot and add in the chicken, bay leaf, a teaspoon each of salt and pepper, lemon slices and also the dried thyme. Cover with a lid and cook the chicken under a low flame for about 60 minutes or till it's soft.
2. Allow the chicken to cool off in the stock pot and then skin and debone the chicken pieces and remove any residue from the broth. Take out the onion pieces, lemon slices and the bay leaf and then return the chicken to the broth. Let it continue to cook under a low flame.
3. Take a large bowl and add in the all purpose flour and salt. Cut the Crisco shorterning into the flour and then mix in 2 ounces of water and knead till the dough becomes soft. Add more water if required.
4. Roll out the dough and cut it into thin pieces of equal size. Drop the strips of flour into the pot cooking the chicken and let it continue to cook under a low flame for about 15 to 20 minutes.
