
This is a lovely chicken and dumplings dish made in the traditional way with fresh celery. To prepare this recipe, you will need the following ingredients,
Ingredients:
1. 3 kilos of chicken pieces.
2. Two medium sized onions, chopped.
3. Six teaspoons of parsley, diced.
4. 190 grams of plain flour (all purpose), sifted.
5. 8 ounces of water.
6. Three teaspoons of salt.
7. One and a half teaspoons of baking powder.
8. 32 ounces of chicken stock.
9. 2 ounces of milk.
10. Six teaspoons of butter, unsalted.
11. Three fresh stalks of celery, diced.
12. One egg.
13. One and a half teaspoons of baking powder. (any type such as tartrate, phosphate, etc)
Preparation:
1. Take a pot and add in all the chicken stalk, along with the chopped celery, onions and the chicken pieces. Add only two teaspoons of salt into the mixture and stir it in. Heat the mixture on a medium flame and put the lid on the pot only half way through. Let the mixture cook for about twenty minutes or till the chicken pieces become soft.
2. Now take a large dish and whip in the milk and eggs together. Add the baking powder, all purpose flour and 1 teaspoon of salt into the dish and mix it well. Cut the unsalted butter into this mixture till the whole mixture turns into a powdery crumble. Now add in three teaspoons of fresh parsley and give it a good mix.
3. Now take five big spoons of the mixture and plop it into the pot containing the chicken. Place the lid on the pot and let it cook for another ten minutes under a low-medium flame. Take out the chicken pieces and dumplings from the pot and keep them in a separate bowl.
4. Sieve the chicken stock in the pot and then pour it back into the pot. Now add in the cup of water along with the left over flour and stir it into the chicken stock.. Let the mixture boil and keep stirring until it becomes dense.
5. Now add the chicken pieces and dumplings back into the pot. You can serve with the leftover parsley. Your chicken and dumplings soup is now ready.
